Creamy Spinach Enchiladas

This was my second time making these, and they were just as delicious as I remembered! Super, super easy as well.
Spicy Venison Sausage with Brussels & Herbed Polenta
Oh y'all. This was SO GOOD, if I do say so myself! Really, really good sausage {mine comes courtesy of T-Pop's annual deer hunt} is the key to this recipe, fo' sho'.
- 1 lb. high quality smoked sausage {venison, if you can get it}, thinly sliced
- 1 lb. brussels sprouts, trimmed & outer leaves removed, then halved
- 1 c. dry polenta
- 2 c. water
- 1 c. 2% milk
- 1 t. dried oregano
- 1/2 c. reduced sodium chicken broth
- EVOO
- kosher salt
- ground pepper
Preheat oven to 400 degrees. In a non-nonstick {oven ready} skillet over Medium heat, heat sausage for about 5 minutes, until fat is rendered and sausage is cooked through. Add brussels and saute - about 3 minutes. If brussels aren't sufficiently coated in sausage fat, add a glug of EVOO. Add chicken broth, cooking another 3-5 minutes. Put entire skillet into the oven and cook for 15 minutes.
Meanwhile, place polenta, oregano, and a dash of kosher salt into a medium-sized pot. Gradually add water and milk, whisking continuously. Bring to a boil, then reduce heat to medium and cook 15-20 minutes, whisking often. Salt and pepper to taste. Top polenta with brussels and sausage... Enjoy!

Turkey Burgers with Sweet Potato Oven Fries

We had some great turkey burgers in Atlanta whilst visiting friends last weekend, and I attempted to recreate them... Total Fail. Mostly because our grill was out of gas so I attempted to "grill" indoors, and it just wasn't the same. I also made the patties too large. The fries were yummy though... the cold water soak really does help make them crispier in the oven!
Hamburgers with Roasted PeeWee Potatoes & Grilled Sweet Corn
This meal was E's masterpiece... all simple summer staples! The pee wees we found were extra-tiny - smaller than a quarter! They were roasted in a 450 degree oven with EVOO, kosher salt, & Johnny's seasoning for about 25 minutes. The corn was rubbed with EVOO and kosher salt and grilled. Aaaaand he spiced up with burgers with a bit of Stubb's Hickory BBQ Sauce and Worcestershire.

















Menu Sunday is basically the reason I use the computer on Sundays-- thanks so much for doing this even though you're so busy! Re: turkey burgers: my husband's favorite are Greek style: load them up with kalamatas, spinach, and feta, serve with tzatziki and tomatoes. So easy and very good.
